Quick & Easy Hot Fudge Sauce

Anyone who knows me knows that I am a huge ice cream fan. Like always-a-carton-in-the-freezer, notice-all-too-quickly-when-new-Blue-Bell-flavors-come-out, Dairy-Queen-really-is-a-stop-sign kind of fan. This sauce is the perfect topping to jazz up ice cream for a special occasion, but simple enough to make just because. It's great because it actually tastes like chocolate, unlike so many of the hot fudge sauces you can get at the store. I like dark chocolate so I use semisweet chocolate chips, but it works with any type of chocolate. One of the most charming things about this sauce is that it gets a little bit chewy when it gets cold on the ice cream. You can potentially get this delicious gob of chewy chocolate in the ice cream soup at the end, yum! 

Quick & Easy Hot Fudge Sauce
1/2 cup chocolate chips
3 tablespoons (light) Karo syrup
2 tablespoons cream
1 teaspoon butter
pinch of salt
1/2 teaspoon vanilla

Combine all of the ingredients together in a microwave safe measuring cup or bowl. 
Heat in a microwave to melt for 1 minute on high. Stir and heat for an additional 30 seconds.
Serve over ice cream.

*You can adjust the amount of Karo syrup based on how chewy you want it to be.
**If you don't use it all right away, you can save it for a couple of days and just pop it in the microwave when you're ready for seconds.
